The 24-month-aged Parmigiano Reggiano of the Latteria Sociale del Fornacione in Felina, province of Reggio Emilia, is a mountain cheese made from organic milk from cows that graze freely in the pastures of the Reggio Apennines.
This natural feeding gives the cheese a rich and complex aroma, with floral and herbaceous notes that reflect the biodiversity of the region. The artisanal processing and 24 months of maturation contribute to the development of a grainy texture with the typical flaky curd structure, offering a balanced taste between sweetness and spiciness.
The Latteria Sociale del Fornacione, founded in 1933, is known for the quality of its products, as evidenced by numerous awards, including the prestigious “Supergold” medal at the World Cheese Awards 2016 in the over 30 months aging category.
