The 30-month-aged Parmigiano Reggiano from the Latteria Sociale del Fornacione in Felina, province of Reggio Emilia, is an outstanding cheese specialty that comes from the pastures of the Reggio Apennines. Made from organic milk from cows raised at high altitudes, this cheese embodies the unique characteristics of an unspoilt and biodiverse region.
The long maturation of 30 months gives the cheese an even more fragile and grainy texture, with a clear flaky structure.
